Beef Brisket has a long history in the United States dating back to the indigenous Indians of southern Texas. Brisket is synonymous with Texas culture and has long been a standing staple for residents of the Lone Star State. Brisket is a cut of meat from the breast or lower chest of a cow. Cattle do not have collar bones the Brisket muscles supports about 60% of the body weight of standing or moving cattle. This requires a significant amount of connective tissue so the resulting meat must be cooked correctly to tenderize the connective tissue. Our best-selling Brisket can be brine-cured or slow-smoked for delicious southern style BBQ.
