Chicken Cacciatore

Note: this recipe works with Thighs, Breasts or Drums

4             Chicken thighs, bone in and skin on

2             Bell Peppers

4             Cloves Garlic

8 oz       Mushrooms

1             Onion

½ tsp     Red Chili Pepper Flakes

1 tsp      Thyme

1(28 oz) Can Tomatoes

½ cup    Chicken Broth

¼ cup     Olives

2 tsp      Italian Seasoning

Dash      Salt and Pepper

1 tbsp    Olive Oil



  1. Heat Oil in large pan over medium-high heat, add the chicken and season with salt and pepper.  Brown about 3-5 minutes per side.  Set chicken aside.
  2. Add onion, peppers and mushrooms and cook until tender, about 5-7 minutes
  3. Add garlic, thyme and red pepper flakes and cook for 1 minute
  4. Add the chicken broth and deglaze the pan by scraping the brown bits from the bottom of the pan with a wooden spoon while the broth simmers
  5. Add the tomatoes, herbs, chicken and olives, bring to a boil then reduce heat, cover and simmer on low for 45-60 minutes, the longer it is simmering on low the more flavor you will bring out
  6. Serve with pasta or rice Or make it super healthy with Zucchini Noodles
