Dublin Coddle - A Traditional Irish Dish with Bacon and Sausages
Dublin Coddle
Note: this recipe works with all of our sausages both pork and beef. It is wonderful topped with a dollop of sour cream. This is a traditional Irish Dish.

Ingredients:
1 pkg Farmer Jims Yummy Bacon
2 pkgs All Beef Regualr Sausage
1/4 cup Fresh Parsley
2 1/5 lbs Yukon Gold Potatoes
2 Large White Onions
1 3/4 cups Chicken Broth
2 Tbsp Apple Cider Vinegar
1 cup Guiness Beer
Dash Fresh Ground Black Pepper
Directions:
- Dice the bacon, then fry the bacon and sausages together on medium heat until the sausages are browned (don't worry about cooking all the way through at this stage) remove from pan and set aside
- Peel and slice the potatoes to a 1" thickness
- Peel and slice the onions to 1/2" thickness
- Cook the onions in the skillet that the bacon was cooked in, adding a few tablespoons of the drippings
- Once the onions are softened add the apple cider vinegar and broth
- In a casserole dish layer the potato slices and add half the bacon, season with pepper and gently pour the onion and broth mixture over top.
- Top the casserole dish with the slightly browned sausages and add half of the freshly chopped parsley
- Cover and Place in the oven at 325 for an hour
- Remove from oven and add the cup of Guiness
- Place back in the oven for one more hour
- Serve and top with bacon and parsley
