Whole Pekin Duck (approx 6 lbs)

This breed was brought to North America from China, which accounts for the name. Today the breed is referred to as Pekin Duck. The famous Chinese dish is made with Pekin Duck, but is referred to as Peking Duck. Unlike the gamey taste of wild ducks or other breeds like Muscovy or Moulard, Pekin Duck has a mild, delicate, and deeply savoury flavour. The fat is sweet and renders out to a beautiful crispy skin which makes it ideal for whole roasting or pan-searing.
