Pork side ribs, sometimes called baby back ribs, are cut from the upper back of the animal near the spine and loin. Shorter and more curved than side ribs, they're also leaner and milder in flavour. This lets them act as a great blank canvas for heavy rubs and barbecue sauces. Your back ribs will also cook faster than side ribs, typically about 3 to 4 hours.
