Old Fashioned Ham (Approx 3 lbs)

Cured and smoked to 40% doneness, our old fashioned ham offers a great middle option between our raw fresh ham and our fully cooked Black Forest ham. This makes for a shorter cook time vs. fresh ham and also lets you create a unique flavour profile—something you can’t do with a fully cooked ham. Our old fashioned ham will readily absorb sweet glazes, mustard blends, and even fruit preserves to add layers of complexity in taste. You can also do a short braise in apple juice, beer or other flavourful liquids.

Note: Government regulations now stipulate that all fresh and partially cooked ham contain Polysorbate 80, a stabilizer that helps to extend the shelf life of the product.
