Unlike picnic and butt roasts which come from the shoulder, a ham roast is cut from the rear leg of the animal between the shank and the spine. It’s a large muscle group that is relatively lean except for the surface fat under the skin. A fresh ham roast is also unique vs. other styles of ham which are pre-cured and partially or wholly cooked. This lets you create your own flavour profile for the roast ham. You can make a brine of your choosing, or mix up a dry rub of salt, brown sugar and your favourite herbs and spices. Oven-roasting is the traditional cooking method as it caramelizes the sugars on the surface while keeping the inside juicy and succulent. Smoked ham is also delicious, and you can infuse the meat with your favourite flavour of wood chips. Be sure to share the pork crackling evenly!
