Unlike pork chops which come from the leaner loin section, butt chops are cut from the animal’s shoulder area. They’re a bit fattier with a good amount of marbling which helps make for a richer flavour. But they’re also a bit tougher. However, with marinating or tenderizing butt chops will grill, broil, or pan-fry beautifully. Try breading and frying them for schnitzel to serve with sauerkraut or smothered in a creamy mushroom sauce. Pork steaks also stand up well to longer, slower cooking methods like braising. Use a bone broth for your cooking liquid to achieve a tasty and tender fall-apart texture.
