Pork Side Ribs, also known as spare ribs, are cut from the lower belly of the animal near the breastbone. They're straighter and longer than back ribs and have more fat and cartilage. This makes for a richer, more savoury pork flavor due to the higher marbling. Spare ribs are best cooked low-and-slow (around 5 to 6 hours) to break down the connective tissue.
