Pure maple syrup comes from the sap of maple trees, which is boiled down to concentrate its natural sweetness. In fact, it takes about 10 gallons of sap to make just one quart of maple syrup. It has a rich, complex flavour profile and a very thin viscosity. And while pure maple syrup is high in sugar, it also contains many minerals and antioxidants. Grocery store maple syrup is a completely different product. The viscosity is very thick because the primary ingredient is high fructose corn syrup. It also contains artificial flavours, colours and sweeteners. None of these things are good for your health. Our maple syrup is produced by a local artisanal producer. It may cost a little more, but it’s well worth it.
