These young rabbits are humanely raised, with no antibiotics or hormones will produce several great recipes and the leftover bones can be used for soup stock. The Chinchilla Rabbits are fed a vegetarian diet of sweet alfalfa, hay, hay pellets. The meat is light, tender, lean and finely textured, and works well with many recipes, in any season. A staple of Italian and French kitchens, rabbit meat is a rarer pleasure in the Ontario.
Rabbits are an excellent source of very lean protein with very low fat levels if you are concerned about fat intake.
